In contrast, fresh shrimp that haven’t been frozen are often treated with chemicals like sodium tripolyphosphate to retain moisture and extend shelf life.

When Dan Anthony was creating the first menu for Sea Island in the 1960’s, he tried just about every whitefish there is to find the perfect source for the highest quality fish. Keeping Sea Island affordable for “the working man” as Dan liked to say, was going to take some creativity and serious sourcing skills! It is not a “fish tale” to say that the secret was in his hands the whole time. We hand filet every piece of Icelandic Pollock in-house to this day, which no other restaurant was (or is) prepared to do. And so, armed with the sharpest of filet knives, we go to work every morning to make sure your filet is cut perfectly, and the price is still affordable for us all!
